Happy Lunar New Year! Celebrating the year of the Ox with my favorite chef today. And he has the BEST garlic noodle recipe and more!
May the year of the Ox bring you peace, happiness, and prosperity. To celebrate Lunar New Year, Colin and I are embarking on a food journey that is both a feast for the eyes and an incredible burst of flavor. Staying true to traditional Lunar New Year foods, we’re sharing recipes that incorporate well wishes with a modern twist. The star of the show is the longevity noodles, which symbolizes a long and happy life. Our version adds brown butter and garlic, paired with lobster.
And equally as important are tangerines and oranges, which are meant to bring fullness and wealth. Eating and displaying these citrus fruits are believed to bring good luck. To add balance and freshness to our brown butter garlic noodle dish, we paired it with an orange pomegranate salad, highlighting tangerines and oranges in combination with fresh herbs.
Before we start, an important detail to welcome the New Year is the color red. Red symbolizes a new beginning and optimism for the Year of the Ox. We’re making all of our favorite dishes in this versatile 8-in-1 pan. It’s a skillet, non-stick pan, saucier, fry pan, steamer, and more! Working in the kitchen and cooking professionally at Michelin restaurants for over 8 years, Colin is very particular about his cookware items and this Always Pan got his seal of approval (he recommends cooking on low to medium heat to get the best wear). Additionally, we both appreciate that it’s non-toxic. Formulated without Teflon, the nonstick ceramic coating is safe and makes cleanup completely seamless. Here we go! This is one of my favorite Colin dishes. He made it for my birthday last year and I love it when he does it again every time. It’s actually quite simple and easy to make. As for the brown butter, Colin makes a lot of it and just refrigerates it (that’s why they look like little cubes in the video). He uses it for savory and dessert recipes.
Brown Butter Garlic Noodles with Lobster
– Ingredients –
Shallots, chopped
Garlic, chopped
Brown butter, 1/2 cup (put butter in pan, cook on medium heat, until butter becomes brown)
Bone stock, 1/2 cup
Miso, 1 tablespoon
Lobster
Egg noodle
Black pepper to taste
Parsley and basil
Chili oil, optional
– Instructions –
– Lobster:
– Boil salted water and cook lobster until lobster becomes light pink-red. Take lobster meat out of shell and set aside.
– Egg Noodles:
– Heat up a pot of water until boiling. Add egg noodles into boiling water and cook the noodles until al dente or for a few minutes. Do not overcook as the noodles will turn soggy.
– Brown Butter Garlic Noodles with Lobster:
– Add oil to pan, add shallots and garlic and sauté until aromatic and golden brown
– Add miso and brown butter, mix gently
– Add bone stock and toss in lobster
– Mix in cooked egg noodles to brown butter garlic sauce
– Add a dash of black pepper and parsley
– Garnish with basil and chili oil
Orange Pomegranate Mix Green Salad
– Salad Ingredients –
Spring salad mix or lettuce of choice
Shaved fennel
Half of avocado
Pomegranate
Orange supremes
– Dressing Ingredients –
1/8 teaspoon mustard
1/2 teaspoon honey
2 tablespoon tangerine juice
1/2 teaspoon lime juice
8 tablespoon canola oil
2 tablespoon sesame oil
1/2 teaspoon shallots, chopped
Basil, finely chopped
Tarragon, finely chopped
Rice wine vinegar, optional for tart
– Instructions –
– Salad Dressing:
– Combine all dressing ingredients to create vinaigrette
– Salad:
– Mix spring greens and shaved fennel together
– Gently toss in pomegranate, avocado, orange supremes
– Add dressing and gently mix
